Jill's Warm Prawn and Mint Salad

1-2 tablespoons fish sauce juice of 1 lime or lemon

1-2 tablespoons fish sauce juice of 1 lime or lemon

3 tablespoons coconut milk

1 tablespoon sugar

1 clove garlic, crushed

1 teaspoon freshly grated ginger

1 fresh red chilli, finely sliced freshly ground black pepper

12 raw prawns

2 tablespoons finely sliced fresh mint leaves

Mix fish sauce, lime juice, coconut milk, sugar, garlic, ginger, chilli and pepper in a bowl. Cook prawns in simmering, salted water for one to two minutes until pink. Toss prawns in dressing, then add mint leaves. Serve warm.
