Fresh Arabian pizzas
You will need:
•Two 300g packs of Quorn, or one pack of quorn and 300g of minced lamb
• Three tins of tomatoes or 12 fresh plum tomatoes
• One medium-sized onion, finely diced
• Half a red chilli, finely diced, seeds taken out
• Three tsp All Spice powder (not mixed spice)
• Two tbs cumin powder
• 1 tbs garam masala
• Black pepper
• Oil for cooking
• Six pittas
For the garnish:
• Chopped coriander
• One pack of baby spinach leaves or mixed green leaves
• One cucumber
• Plain yoghurt
For the filling/topping:
Sweat the onions over a medium to high heat and then add the Quorn or quorn/lamb mix (the latter is definitely richer in taste).
After a few minutes add the tomatoes and add water. It needs to be the consistency of a topping so add water if it is too thick.
Add in the spices and simmer for 20 minutes.
Prepare the garnish ingredients and leave them on a plate on the table.
The pitta/pizza:
Toast a couple of pittas and watch the bread balloon out. Now you have the option of cutting off the top and using the pitta as a sandwich, which you stuff, or of cutting round the pitta to give yourself two very thin pizza bases.
Ask the kids what they want: in or on? Mine go for both.
When I put the filling on, I put it back under the grill to complete the pizza-like effect.
Serve the pitta/pizza on the table and let the kids add the garnish. If the filling goes into the pitta first, load the pitta with baby spinach and cucumber.
Your children will have eaten tomato, cucumber, spinach, coriander and onion.
