From Limoux, the sparkler region in the south of France, comes a fizz with a sunny personality. Domaine de l'Aigle Tradition Brut NV (River Wines, 1850-794637, £10.99 if you buy a case, which may be mixed; see below) tastes of ripe pears and apples, but it also has the yeasty notes, creamy middle palate and firm finish indicative of a fairly serious approach. Made from the classic champagne grapes by the champagne method, it's two-thirds Pinot Noir, one-third Chardonnay, barrel-fermented for extra richness. Well worth trying.
