Sir, - Jimmy and Erica Murray (letters, December 3rd) tell us about the growing markets for organic produce, both abroad and at home. We too thought there would be a huge demand for our organic heel, coming as it does from a pure bred herd of Dexters (a breed that has never had any BSE cases) who are vegetarians, fed on the highest quality organic grass and hay.
Have we been inundated with enquiries and orders? Not at all! In fact, it is harder than ever to sell our produce. "Don't panic, eat organic" is a fine slogan but doesn't translate into action. Perhaps consumers are like the TCD students who, discovering a worm in a sandwich, find it a cause for concern rather than a sign that a live worm which hasn't been killed by chemicals means that fresh, wholesome produce is used in the sandwich filling. - Yours, etc,
