Raw milk and pasteurisation

Sir, – What is wrong with raw milk, John McKenna asks ("What is so wrong with unpasteurised milk?", Health + Family, May 13th). It can transmit tuberculosis, brucellosis, salmonella, listeriosis, among other things. Pasteurisation has made this wonderful food safe and saved countless lives over the years. That process is not embarked upon to "control" anything other than the health of the consumer. Modern science has ensured that food that is two days old is not that much inferior to food that is two hours old. – Yours, etc,
