Sir, – Well done to Gerard Bonner for calling tipping out as it is, a culture (Letters, November 8th). The guilt aspect to not tipping is not to be underemphasised. I know many people who will tip after receiving bad service or bad food for fear of being judged for not leaving a tip.
Ireland has one of the highest minimum wage rates in the EU.
I have had many lively conversations in a restaurants with friends who would argue that they should leave a 10 per cent tip on top of a 10 per cent service charge.
This, in effect, is your meal plus 20 per cent extra.

Why is it that a lot of restaurants put a service charge on tables over six people? The table is easier to prepare and serve, is it not? I venture that the owners assume that staff will get better tips from three tables of couples than a table of six!
Since the 1970s under EU law, VAT must be included in the displayed price of a meal on a menu and it is an offence not to do so. What about the same for staff wages, tipping and service? – Yours, etc,
