ANOTHER luminary of Ireland's grand houses is the chef of Kildare's K Club, Michel Flamme, who has announced plans to run three four day cookery courses, with the first between November 25th and 28th. The idea behind a fairly intensive few days work is that the 12 participants should not only be able to hone their culinary skills, but that they should also be able to cook a gala dinner.
The courses kick off with a fairly relaxed Monday session, before a 7 a.m. visit to the market next day. Some of the dishes planned for the gala dinner include turbot with a grain mustard mousse and a saffron and ginger sauce, roast pheasant stuffed with Clonakilty black pudding, and brown bread and berries crunch parfait served with a cocoa tuille.
The courses include a question and answer session, and finish after lunch on the Thursday. Places are limited to 12, and the cost of £840 includes all meals, tuition and three nights accommodation in the K Club. Further courses are planned for January and February.
