Ingredients

  • 200ml chicken stock
  • 300g diced turkey and ham (including any sticky bits)
  • A pinch of mixed spice
  • 200ml sour cream
  • 1tbs cranberry sauce
  • 1tsp horseradish
  • 1 packet frozen Yorkshire puddings
  • Juice of 1 mandarin or half an orange
  • 50ml olive oil
  • 1 pinch of sugar
  • Salad leaves
  • Salt and black pepper

1 Set the oven to 150 degrees.

2 Heat up the stock and add the turkey, ham and mixed spice. Keep this warm.

3 Mix the sour cream, cranberry and horseradish together.

4 Put the puddings in the oven for 10 minutes to defrost and crisp up.

5 Meanwhile, mix the orange juice, olive oil and sugar together, season and dress the leaves.

6 Drain off any excess stock from the meat, then remove it from the heat and fold in the sour cream mix. Fill the Yorkshire puddings with this mixture.
