Crozier Blue cheese, roasted plums and figs, oatcake crumble

Ingredients
  • 4 ripe figs, halved
  • 4 ripe plums, halved and stoned
  • 200ml apple juice
  • 1tbs dark brown sugar
  • 1 star anise
  • 1 cinnamon stick
  • 1 bay leaf, fresh if possible
  • 1 sprig of thyme
  • FOR THE CRUMBLE:
  • 110g soft butter
  • 25g sugar
  • 55g flour
  • 100g jumbo oats
  • A pinch of salt
  • 150g Crozier Blue cheese (or another blue if unavailable)

1. Set the oven to 185 degrees.

2. Place the figs and plums on an oven-proof dish, then add the apple juice and scatter the sugar over the fruit.

3. Add the spices and herbs. Bake for 20 minutes until the fruit is soft and tender. Remove and allow to cool.

FOR THE CRUMBLE:

1. Put the butter, sugar, flour, oats and salt into a bowl and rub together until combined into a crumble mixture (it should have a sandy texture).

2. Spread over a baking tray and cook for 12-15 minutes until golden.

3. Serve the cheese with the fruit, the crumble and a little residual syrup.
