Brussels sprout mash

  • 500g Brussels sprouts
  • 25g butter
  • 75ml cream
  • 1 tsp fresh nutmeg
  • Salt and pepper to taste
  • Chopped fresh parsley


Cook the sprouts in salted boiling water for 10 minutes.

Melt the butter and heat the cream in a small pan over a low heat. Drain the sprouts and whizz in a food processor with the butter and cream and the nutmeg, salt and pepper.

Put in a serving dish and garnish with a knob of butter and some chopped parsley.
