The smell of bread – using your loaf

Sir, – Scientists have discovered that we love the smell of bread (“UCD scientists reveal why we love the smell of bread”, September 8th).

Well, I never went beyond primary school and I could have told them that.

The smell of bread is usually followed by the delicious taste of bread, whether simply with butter or with the addition of marmalade, jam, honey or other tasty substances. We like the taste, remember it and so the smell brings back pleasant memories. The same is true of the smell of a cooked breakfast, fried onions and many other foods.

What I really want to know, and no amount of research will work this out, is how science explains our love of the crisp sandwich. – Yours, etc,
