Remembering Sean Kinsella

Sir, – In the early 1990s in the bowling alley in Tallaght there were only two items on the cafe menu – an all-day fry or a burger.

On one occasion I looked for the fry, expecting to be immediately served with something that had lain there for several hours. But I was told I would be served at the table. Later, up came the regular fry – rashers, sausages, eggs, toast. I can truthfully say it was the best-cooked ordinary breakfast I ever had. I just had to ask who had cooked it. It turned out to be Sean Kinsella, having come down in the world.

Never in my life would I ever have been able to afford to eat at the Mirabeau, but I still got to experience cooking by the great chef for a short while. May he rest in peace. – Yours, etc,
