Finally, a stunning idea which I discovered in Vianna's la Place's book, Un- plugged Kitchen. This Peach Sandwich is awesome, the sweetness of the ripe peach and the sprinkling of sugar within the bread combining in utter joy. Use your best bread for this, and if you have a bread with some nuts, for the firm note of the nuts can be delightful. Double the quantities to make two sandwiches, and while la Place suggests that peeling the peach is optional, I think it is mandatory.
Peach Sandwich
2 slices sturdy rustic bread
a little unsalted butter
1 ripe, fragrant peach, sliced
sugar to taste
Toast the bread slices and, while warm, lightly spread with butter. Arrange peach slices on one slice of bread and sprinkle with sugar (amount depends on the sweetness of the peach). Cover with the other slice of toast and very gently press down to bind.
