Walnut & sage cream

Ingredients

  • 250g walnuts, soaked in water overnight or for at least 10 hours
  • 3 tbsp apple cider vinegar
  • 100ml olive oil
  • 50ml water
  • Lots of salt and pepper
  • 2 cloves garlic
  • Bunch each of fresh sage (about eight leaves) and oregano
  • 50g grated Gruyère
  • 100ml cream

Method

This is also delicious for vegetable “pasta”, such as spiralised courgettes.
