Asian ‘Caesar’ salad

  • Serves 42 heads of Cos lettuce
  • 100g white miso
  • 150g celery – 2-3 stalks, washed and chopped
  • 100ml olive oil
  • 4 cloves garlic, peeled and roughly chopped
  • 1tbsp dijon
  • Salt and pepper


Wash and dry the Cos leaves. Make the dressing by putting everything in a blender or food processor and blitzing till smooth. Dress the salad just before serving.

Naturally feel free to add some Parmesan or croutons.
