Roast kohlrabi with maple syrup and sesame seeds

Ingredients
  • 50 mls olive oil
  • 2 kohlrabi, peeled and cut into ½ cm discs
  • 1 tbsp butter
  • 1 tsp of fresh picked thyme
  • Salt and black pepper
  • 2 tbsp maple syrup
  • 2 tbsp sesame seeds

1 Set the oven to 185 degrees.

2 Drizzle the olive oil over the bottom of a shallow casserole then layer the kohlrabi over the base.

3 Dot the butter over the top then sprinkle on the thyme leaves. You can use a couple of bay leaves if you prefer.

4 Season, then drizzle over the maple syrup, then lastly scatter over the sesame seeds.

5 Bake in the oven for 45-50 minutes basting once or twice until the kohlrabi is tender and the sesame is golden and crunchy.
