Recipe: Red grape and chilli salsa

Ingredients
  • 200g seedless red grapes, washed and quartered
  • 1 red chilli, deseeded and finely chopped
  • Juice of a lime
  • Splash of olive oil
  • A red onion, very finely chopped
  • Small bunch (15g) of chopped parsley and coriander

In a bowl, mix all the ingredients together to make the salsa. If it’s a bit on the dry side, add a touch more olive oil. Season well to taste.

Serve with the mackerel fillets.
