Recipe: Red grape and chilli salsa

- 200g seedless red grapes, washed and quartered
- 1 red chilli, deseeded and finely chopped
- Juice of a lime
- Splash of olive oil
- A red onion, very finely chopped
- Small bunch (15g) of chopped parsley and coriander
In a bowl, mix all the ingredients together to make the salsa. If it’s a bit on the dry side, add a touch more olive oil. Season well to taste.
Serve with the mackerel fillets.
