Son of Guilbaud
When Patrick Guilbaud arrived in Dublin and opened his eponymous restaurant, in 1984, it wasn't the most auspicious time to bring haute cuisine to the capital. In the very early days, he recalls, there was such demand for Piat d'Or that he was forced, reluctantly, to add it to the wine list. Just as Guilbaud brought something new to Dublin more than 10 years ago, his son Charles will be opening a brasserie with a difference on South Anne Street later this year. Still in the planning stage - the building is under construction - the new restaurant will be, according to the Guilbauds, unlike anything else in Dublin. Charles, who is 27 and has been working in business administration for the past five years, is hoping to have the brasserie up and running by November. "It would be great to be open in good time for Christmas," says Charles, "but rushing things doesn't make sense. We have to get it right. If we have to wait until the New Year, we will."
