Nose to tail date

The West Waterford Festival of Food (April 11th-14th) has secured the involvement of "chef's chef" Fergus Henderson of St John restaurant in London, and nose-to-tail eating fame. Henderson, accompanied by his wife, restaurateur and writer Margo, will collaborate with the Tannery restaurant on a seven- or eight-course tasting menu – using all the less fashionable bits of beasts, on Saturday, April 13th.
