This is my go-to meal when I’m craving comfort food. It’s very affordable and ready in less than 15 minutes. It’s inspired by dan dan noodles, one of the most famous Sichuan street foods, which usually consists of noodles, spicy peanut sauce and minced pork. But, in Saucy Cow style, this is my veganised version, where I use diced mushrooms for the mince.
I love making this for non-vegan friends as they are always shocked by how good the mushroom mince is. The dark soy sauce is a game changer in this recipe, as it really elevates the mushroom mince. It’s essential for making the recipe work.
Mushrooms are a great ingredient for eating affordably as a vegan or non-vegan, and you can always find Irish-grown mushrooms in the shops. You can use any noodles you like in this dish, dried or fresh – I love the flat rice noodles for this.
