Sir, - I think that Jane Herlihy (March 20th) may be missing the point regarding Irish staff versus non-nationals in restaurants. I would feel that a large proportion of non-nationals are both more experienced and harder working than the home-grown variety.
The problem is with their language skills. Poor understanding of English leads to all sorts of confusion for both restaurant customers - and kitchens. - Yours, etc.,
