Sir, - Is Kevin Myers (An Irishman's Diary, October 11th) not aware that no French gentleman would retire, whether for the night or for the afternoon, with breath redolent of any of his nation's cheeses, but out of courtesy to his partner would follow cheese with sweet? Or so, long, long ago, I was once led to believe, and to practise.

He may also be astonished to learn that the late, lamented Fanny, with the direction of whose TV programmes I was at one time most challengingly charged, spelled her name, as did Johnnie, with but a single "d".

Dear Fanny, infuriating Fanny, kind Fanny, whose soufflΘs never, ever, fell - may her name at least be remembered as it should be spelt. And so may she lie at peace, not spinning in her grave! - Yours, etc.,
