The Irish oyster season was opened in Paris yesterday when the Ambassador, Mr Patrick O'Connor, sampled the first oyster of the season at an Irish pub, the Coolin. Bord Iascaigh Mhara and Guinness are preparing oyster promotions in France and Belgium, a market worth more than £1 million a year.
