FOOD FILE:The Premium Butcher, a Dawn Meats company, is a new online meat shop offering west Cork dry-aged beef, west of Ireland lamb and Fenor Farms pork from Co Waterford.

The meat is delivered by courier anywhere in Ireland and packed in sealed foil bags inside chiller boxes which are kept cool with ice packs. Orders more than €70 are delivered free of charge, and smaller orders have a €10 courier fee. Prices are competitive and the website’s best sellers at the moment are 400g 21-day dry-aged T-bone steaks (€9 each), and recession-busting lamb shanks (€2.50 for two). thepremiumbutcher.ie.

Cotter and Flynn double bill

Two for the price of one is how the Tannery Cookery School is billing its Paradiso Harvest demonstration, which will be given by Denis Cotter of Cork vegetarian restaurant Cafe Paradiso, with input from Tannery chef/proprietor Paul Flynn, on Saturday, September 11th. Cotter is a gifted teacher who makes his recipes seem simpler to recreate than they sometimes appear in his books. So, if you’ve ever read one of his recipes and thought it sounded delicious but involved too much work, this could be the course for you. Flynn says his kitchen garden will be providing baby turnips, radishes, beetroot, leeks, late summer salads and chard for Cotter to work his magic on. The full-day course costs €180, including lunch.
