Sweetcorn Pancakes

 

200g canned sweetcorn
90g plain flour
1 egg
50ml milk
Half a teaspoon of baking powder
1 tablespoon sunflower oil to fry


Put the sweetcorn into a mixing bowl and add all the other ingredients (except oil).

Let the kids mix them together with a wooden spoon until they combine well to form a batter.

Heat the oil on a non-stick frying pan at a medium heat and add the batter one dessert spoon at a time. It will flatten to the size of a small burger.

Allow to cook until bubbles form on the surface (that should take two or three minutes), then flip over and cook the other side for about a minute until it’s golden.

Keep small kids busy while you’re doing the frying by letting them chop peppers and cucumbers with plastic knives and serve these on the side.
