Madam, – Tom Doorley gives the thumbs-up for a new restaurant in a recent review (Magazine June 13th). He makes particular reference to its BYOB (bring your own bottle) policy, which although common in many other countries, is very much still the exception in Ireland. Even more unusually, this restaurant didn’t charge for corkage. I would like to think this practice becomes more widespread, as many cafes and restaurants now struggle to attract customers.
Of course, there are many establishments which depend on the mark-up on their bottles of wine to supplement their turnover. – Yours, etc,
