ANYONE looking for something more than a little out of the ordinary should note that Ed Hick, the great pork specialist of Sallynoggin, on Dublin's southside, has begun to buy organic saddleback pigs from Gerry Harpur, a fine organic farmer from Co Meath. Mr Hick will, among other things, be smoking the loins of the animals to make his celebrated kassler, but this time, of course, it is produced from the most superlative animals imaginable.
