Carrot mug cakes

Ingredients
  • 6tbs self-raising flour
  • 4tsp brown sugar
  • 1tsp ground cinnamon
  • 1tsp ground mixed spice
  • ½tsp bi-carbonate soda
  • 70g carrot, grated
  • 2tbs walnuts, finely chopped
  • 2 eggs
  • 1tbs milk
  • 1tbs vegetable oil
  • For the cream cheese icing: 30g cream cheese and 50g butter, both at room temperature; 2tbs icing sugar mixture; ½tsp vanilla extract
  1. Lightly brush the inside of 2 large mugs with vegetable oil and line the base with baking paper.
  2. Combine flour, sugar, cinnamon, mixed spice and bicarbonate of soda in a bowl.
  3. Stir in grated carrot and walnuts.
  4. Make a well in the centre and add the egg, milk and oil; mix until well combined.
  5. Spoon the cake mixture into the prepared mugs.
  6. Microwave on High for 2½ minutes or until risen and a skewer inserted comes out clean. Cool completely.

For the cream cheese icing:

  1. Beat the cream cheese, butter, icing sugar and vanilla in a bowl until pale and creamy.
  2. Smooth icing onto the top of the mug cakes, sprinkle with walnuts and serve.
