Carrot mug cakes
Ingredients
- 6tbs self-raising flour
- 4tsp brown sugar
- 1tsp ground cinnamon
- 1tsp ground mixed spice
- ½tsp bi-carbonate soda
- 70g carrot, grated
- 2tbs walnuts, finely chopped
- 2 eggs
- 1tbs milk
- 1tbs vegetable oil
- For the cream cheese icing: 30g cream cheese and 50g butter, both at room temperature; 2tbs icing sugar mixture; ½tsp vanilla extract
- Lightly brush the inside of 2 large mugs with vegetable oil and line the base with baking paper.
- Combine flour, sugar, cinnamon, mixed spice and bicarbonate of soda in a bowl.
- Stir in grated carrot and walnuts.
- Make a well in the centre and add the egg, milk and oil; mix until well combined.
- Spoon the cake mixture into the prepared mugs.
- Microwave on High for 2½ minutes or until risen and a skewer inserted comes out clean. Cool completely.
For the cream cheese icing:
- Beat the cream cheese, butter, icing sugar and vanilla in a bowl until pale and creamy.
- Smooth icing onto the top of the mug cakes, sprinkle with walnuts and serve.
