Speaking of delicious new ideas, John Dunne, chef of Morels restaurant in Glasthule, has introduced a new tasting menu as part of seasonal changes to the menu. Tasting menus are frequently rather cumbersome, rather expensive affairs, but Dunne's light cooking style, and the fact that the Morels tasting menu costs an affordable £29.95, should see this new departure quickly acquiring a following. Certainly, many of the new dishes sound scrummy: spring vegetables with rice noodles, sesame seeds and soy; warm terrine of crabmeat and scallops with a chive butter sauce; Parma ham and crispy artichokes with seasonal salad with sherry vinaigrette; saddle of rabbit with basil, seed mustard and macaroni; panseared salmon with green olive tapenade and courgettes; roast suckling pig with spring vegetables and plums.
