Asian gazpacho

Ingredients
  • 1 tin coconut milk
  • 2 large tomatoes, cut into chunks
  • 1 ripe avocado
  • 2 cloves garlic, peeled and crushed
  • Big knob ginger, peeled and sliced
  • 25g miso paste (1 large tbsp)
  • Juice of 2 limes and 2 lemons
  • 1 courgette, sliced
  • 1 red chilli, de-seeded and sliced
  • Big bunch each of coriander and basil
  • 1 tbsp fish sauce
  • Salt and pepper
  • 1 red onion, very finely chopped, for garnish
  • Coriander, for garnish

This couldn’t be easier. Blitz everything except the onion and coriander in a liquidiser or food processor to form a smooth soup. This takes about two minutes. Pour into bowls and sprinkle the finely chopped red onion and coriander on top.
