Having spent more than six years there, she felt it was time for a change when the doors closed.

Lennox is now studying business, with the aim of opening a cake shop in the Dundrum area of Dublin, where she comes from. In the meantime, you can buy her cookies, scones, cakes and tarts from a stall in the garden shop at Airfield House and Farm, also in Dundrum, on Saturdays, between 10am and 4pm. Lennox starts baking at dawn on Fridays and works until after midnight to stock her stall - although she makes the muffins and scones on Saturday mornings, to ensure they're really fresh. Sticky toffee pudding was a Dobbins speciality, and she is selling individual puddings in little tubs, ready to be heated in the oven or microwave, for just €2. The toffee apple and winter berry Bakewell tarts are also big sellers, and there's a different cookie of the week to try every Saturday.
