Waldorf salad

Ingredients
  • 4 sticks celery, finely diced
  • 2 apples, cored and diced
  • Juice of half a lemon
  • 2tbs natural yoghurt
  • 2tbs mayonnaise
  • Half tsp Dijon mustard
  • Salt
  • White pepper
  • 1 handful seedless red grapes, halved
  • 2tbs finely chopped parsley
  • 60g pecans, toasted and roughly chopped
  • 2 handfuls salad leaves, torn into bite-size pieces

1. Place the celery and apple in a bowl. Add the lemon juice and mix to coat evenly.

2. Add the yogurt, mayonnaise and mustard, mix well. Season with salt and pepper to taste.

3. Stir through the grapes, parsley and half of the pecans.

4. Arrange the salad leaves in a serving bowl. Spread the apple mix on top and scatter with the remaining pecans. Serve right away.
