Cathy McCarter spent her childhood on a sugar-cane farm in Swaziland, where every Christmas her family made a rum-soaked, Caribbean-spiced fruit cake with a secret ingredient, Angostura bitters. She now lives in Skibbereen and bakes her Caribbean Christmas cakes for sale. A 20cm one costs €20 (there are other sizes).
