Baked treats, fermented foods, cocktail and burger kits

Food File: The Fermentery, from the couple behind Plúr Bakery, will open mid-April selling bread, pastries and fermented foods


Seamus Jordan and Jenna Black of Plúr Bakery, and kombucha and fermentation enthusiasts James and Janine Ludlow, are joining forces to open a bakery, shop and cafe on the main street in Borris, Co Carlow. The Fermentery is scheduled to open mid-April and will sell sourdough bread and pastries, fermented foods, kombucha on tap, and hot drinks to go.

“There will also be pickles, miso and koji-based ferments. We will also be producing our own koji in-house. We’re really excited to open a community hub where we can experiment and share our passion for fermentation,” says Jordan.

A former chef, Jordan worked at Firehouse Bakery in Co Wicklow, moving from the kitchen into the bakery, where he stayed for two years, and has also trained with Chad Robertson at Tartine Bakery in San Francisco, which is where his partner Jenna Black is from.

Jordan plans to continue to supply Plúr bread and pastries to the Allta Bakery Saturday pop-ups, where he says demand for their vegan pastry range, including peanut butter and jelly, chocolate hazelnut, and almond sourdough croissants, is exceptionally strong.

Easter roast delivered

The Easter meal kit from Bujo in Sandymount is one of those welcome treats that is available to order for delivery nationwide. A ready-to-roast striploin of grass-fed Irish beef is the centrepiece of the kit, with sides including duck fat roast potatoes as well as gratin dauphinoise, roasted root veg, gravy and salsa verde.

For dessert there are chocolate brownies with salted caramel and white chocolate. A burger kit for six people is also included, for another day, along with a Bujo tea towel to help with the wash-up.

The box, created by Bujo culinary director Gráinne O’Keefe, feeds six, and will be delivered on Friday, April 2nd. It costs €90, plus €7 for delivery.

Coffee cocktails

Vice Coffee Inc's St Patrick's Day release of its Irish coffee cocktail kits proved so popular that the range is to be extended. "The Irish coffee cocktail will be joined by more coffee-based cocktails like espresso martini, cold brew negroni and iced Irish coffee. We'll likely launch a new one each month on the way towards summer," says Vice's Tom Stafford.

The Vice Irish coffee comes ready to heat up and is made with single origin Colombian coffee roasted by Imbibe and Teeling Small Batch Whiskey. The 500ml bottle makes four drinks (€22.50).
