Ingredients
- 200g green beans
- Sea salt
- 3 tbsp vegetable oil
- 120g pork mince
- 1 tbsp diced ginger
- 3 cloves garlic, diced
- 1 tsp dried chilli flakes
- 3 tbsp oyster sauce
- ½ tbsp fish sauce
- Handful fresh coriander, thinly sliced for garnish
- 1 tsp dried chilli flakes, for garnish
- ½ tbsp toasted sesame seeds, for garnish
- Place a non-stick frying pan on a medium heat. On a separate ring, place a saucepan of freshly boiled water on the heat, bring to the boil, and season well with salt.
- Blanch the green beans for two minutes in the boiling water, then strain and set aside.
- Add the oil and pork mince to the hot, non-stick pan and cook over a medium-high heat until caramelised all over. Then add the diced ginger, garlic and the chilli flakes and fry it all off until the garlic has gone golden brown. Stir in the oyster sauce and fish sauce and cook for two to three minutes.
- Add the blanched green beans to the pan and stir them through to coat evenly in the glaze and mince.
- Place into serving bowls and garnish with coriander, some more chilli flakes and toasted sesame seeds.
