Seasonal salads

A chara, – Further to Geraldine Kenny's letter (February 6th), all vegetables have their season, and for the currently elusive Irish scallion it is May to November.

Rather than plan a recipe and then go hunting for ingredients, why not do the opposite? See what fresh seasonal Irish produce is available in the supermarket, take it home and cook it. Eating according to season makes it much easier to source Irish produce. It is also cheaper, more nutritious and produces less carbon. – Yours, etc,
