Popeye made a good choice. Dark leafy greens like spinach are high in vitamins, low in calories and can be prepared any number of ways.

Spinach is loaded with magnesium, folic acid and vitamins K, A and C. It’s also one of the best plant-based sources of iron.

Its high water content means fresh spinach reduces in size considerably when cooked. Frozen baby leaf spinach comes in small blocks and can be thrown into soups, curries and pasta or eaten on its own.
