Delicious oven-baked barbecue ribs

Ingredients
  • Serves 4-6
  • 1.5kg pork ribs
  • 100ml maple syrup
  • 1 tsp ground cardamom
  • 1-1/2 tsp ground ginger
  • 1 tsp Szechuan peppercorns
  • 2 tsp English mustard
  • 300ml stout
  • Salt & pepper

Preheat oven to 180 deg. Mix ingredients together, season well, pour over the ribs, cover with cling film and marinate in the fridge, preferably overnight but certainly for three hours. You can then forget about it until later. When you’re ready to cook, remove the ribs from the fridge and bake in the oven for 90 minutes to two hours. Take care that the marinade doesn’t burn – a little boiling water added at a later stage can stop this happening without ruining the caramelisation process that makes these ribs so tasty.
