Carrot salad

Ingredients
  • <ul> <li>1kg carrots</li> <li>1 red onion, peeled and very thinly diced</li> <li>Juice of 2 lemons</li> <li>150 ml olive oil</li> <li>Salt</li> <li>1 tsp honey</li> <li>1 tsp Dijon mustard</li> <li>Lots of black pepper</li> <li>Very big knob ginger, peeled and finely grated</li> <li>1/2 tsp ground cardamom</li> </ul>

Serves at least six as a sidedish.

Peel the carrots and then grate them. Put them into a large bowl and then add the onions. Mix the ingredients for the dressing in a little jar or whisk them together: lemon juice, olive oil, salt, pepper, honey, mustard, ginger and cardamom. Add this to the carrots and mix well. Season and taste. Feel free to add spring onions or chopped herbs. This was fine to eat again the next day, but it may need draining.
