My favourite cake recipe: banana and coconut cake

This is really one of the best cakes out there, and it’s very easy to make.


BANANA AND COCONUT CAKE
125g butter,
240g light brown sugar
2 large free range eggs
2 ripe bananas peeled and mashed
125ml milk
175g plain flour
1tsp baking powder
75g desiccated coconut
A pinch of salt
Half a teaspoon of mixed spice.


* Preheat oven to 180/350/ gas mark 4. Line a loaf tin with greaseproof paper.
* Cream the butter and sugar together until they are light and fluffy and then beat in the eggs one at a time.
* Stir in the mashed banana and the milk, then fold in the flour, baking powder, coconut, salt and mixed spice.
* Mix until smooth, then turn into the prepared tin and bake for approximately one hour or until cooked. To check if done, stick a skewer or knife in and it should come out clean.
